In the book The Fairy Queen, there is a mean task that the Red Cross knight has to undertake. And that is to defeat the dragon. Now, in other media, the dragon is a very prevalent dangerous figure. Just like this one, which was very prevalent in medieval times. In other books, like Dante's Inferno and Beowulf, a dragon represents disease, corruption, old age, and endless greed. A dragon is a never-ending figure of everything that a person is scared of. Or if they're scared of themselves and their inner demons. which is reflected onto the dragon in such a way that it shows our heroes most inner and deeper thoughts about themselves and about the world inside of Beowulf described the world as you know distraught and greedy which is what the dragon.
But why a dragon why specifically is a dragon the one element that every book has that describes fear why not just put in any other creature a demogorgan a phoenix a fire wolf anything anything but no they always choose to have a dragon but if you take a look at dragon mythology they are always eternal they are always exactly what everything fears they are always and always the biggest predator the biggest scary thing ever which is why that is what's described fear is eternal which is what the hero feels.
